Blackberry Skillet Cobbler
1 cup all-purpose flour
1 1/2 cups white sugar, divided
1 teaspoon baking powder
1/2 teaspoon salt
6 tablespoons cold butter
1/4 cup boiling water
2 tablespoons cornstarch
1/4 cup cold water
1 tablespoon lemon juice
4 cups fresh blackberries, rinsed and drained
1. Preheat oven to 400 degrees F (200 degrees C).
2. In a large bowl, mix the flour, 1/2 cup sugar, baking powder, and salt. Add the butter.
3.Cut in the butter until the mixture resembles coarse crumbs.
4.Stir in 1/4 cup boiling water and combine just until mixture is evenly moist.
5. In a separate bowl, whisk the cornstarch into the cold water until dissolved.
6.Whisk in remaining 1 cup sugar and lemon juice.
7. Then add the blackberries and very gently combine
8. Transfer to a cast iron skillet and bring to a boil over medium heat, stirring frequently. Allow to boil 2 minutes, still stirring frequently.
9.Drop dough into the skillet at random by spoonfuls.
10. Bake 20 to 25 minutes in the preheated oven, until dough is golden brown.
We like to eat this warm with vanilla ice cream. Hope you enjoy it!


















Yummy! Could this be done in a non-cast iron skillet? I wish I had one but don’t so would have to improvise :-)
Also, do you think if I made this with blueberries and blackberries…it would work?
Oh, it looks so good and I am looking for a way to use up my blueberries and blackberries:-)

As long as the skillet is oven safe it will work.
I’m sure blueberries will work in there too. I’ve actually thought about substituting them, or doing a peach version as well with just a couple spice modifications.

This looks yummy.. .I think you can wrap a skillet’s handle in aluminum foil and use it in the oven.

I haven’t made blackberry cobbler in a LONG time. This looks so good, it’s really making me wish I still had blackberries growing in my back yard! Great photos!

I would increase the sugar/flour/butter mixture, since I ate half of it in the process of making this (washed down with a nice Shiraz). Picked the blackberries tonight on an island in the Columbia River, reached via kayak with my dog. Few people visit this area so the thorny vines were loaded with plenty of berries for easy picking.
Put the cast iron skillet on a cookie sheet in the oven, to catch spillovers.
25 minutes in oven is about right. It’s ready! Now for the ice cream…..
